Citrus and avocados are such a classic combination. Native finger-limes, the caviar of the vegetable world, add a surprising burst of texture and flavour to the guacamole; and the touch of pepperberry, a unique native taste. The use of sweet potato to serve with the gaucomole is inspired by the frequent use of yams and tubers as a food source throughout time.
Preparation Time: 10 Minutes
Makes approx 2 cups
1/2 red onion
2 native finger limes
1/4 tspn mountain pepper leaf
Salt and pepper, to taste
Finely dice red onion. Squeeze juice of ½ lemon over the red onion and leave to sit in bowl for five minutes.
In a separate bowl gently mash the avocados.
Add red onion and lemon juice mixture to avocado.
Cut the end of each finger lime and squeeze pulp into mix, remove the seeds from pulp.
Finely grind the mountain pepperberry, black pepper and salt using a mortar and pestle.
Season to taste and serve with baked sweet potato chips, gm-free corn chips or crackers of your choice.
