400g pitted cherries
70g plain flour
1 cup buttermilk
3 organic eggs
1/2 vanilla bean, scraped
60g caster sugar
1 cup slithered almonds, toasted
Sweetened mascarpone, to serve
Preheat oven to 200 degrees.
Grease an oven proof dish and scatter the cherries evenly.
Sift the flour into the sugar.
In a food processor, blend the eggs with the buttermilk and vanilla.
Slowly add the flour and sugar mixture, until it becomes a smooth batter.
Pour the batter over the cherries and bake for 20-25mins or until just set.
Scatter with toasted almonds and serve with sweetened mascarpone.
